One-Dish Salad Meals includes more than 100 recipes for salads that are hearty enough to serve as a meal in themselves. The various types of sal- ads have been divided into four chapters: those based on good carbs made with carbohydrate-rich ingredients such as barley, quinoa, brown rice and pasta which have low or medium glycemic loads that provide valuable energy without causing spikes in blood sugar levels; high-pro- tein salads based mainly on fish and chicken and other lean meats; super- food salads, which are made with ingredients high in antioxidants, including fresh vegetables, fruit, beans, lentils, nuts and seeds; and then a final chapter on classic salads, from coleslaw and tabbouleh to Niçoise and caprese salads.
